One more creation for SoGood magazine #sogoodmagazine. Very tasty, beautiful textures, amazing Valrhona chocolate…One of my favorite cakes! And my new silicone mold. Inside: crunchy layer, sponge cake, cremeux, mousse Alpaco, mousse Biskelia.

  1. I'm not a dessert guy but this is incredible. How do one get that "powder coated" look on the surface? It looks like you're spraying it with something over multiple passes.

  2. What were you spraying on the cake to get it that texture? I did a similar approach to a cake with a bunch of cocoa powder but it was such a mess.
